Who doesn’t love a good taco?! These plantain shells are my new addiction! They add such great flavor!

How pretty is red cabbage?! I love adding it to dishes to make them more colourful! Also salads- whoever I have been on a road trip the first thing I want to eat when I get home is a salad so I LOVE finding or coming up with new salad recipes.
Maple Rosemary Pecans
1/2 lemon, juiced
1 soaked date
1/4 c olive oil
1 tsp coriander
1/4 tsp sea salt
1/2 tsp black pepper
1. Mix spinach, red cabbage, pomegranate, pears and maple rosemary candied pecans in a large bowl.
2. Toss with with coriander spiced vinaigrette or leave it on the side for guest to add as much as they desire.
1. Soak 1 date in 2 tbsp of water for at least 15 minutes.
2. In a mini chopper or magic bullet mix juice from 1/2 lemon, 1 soaked date, 1/4 c olive oil, 1 tsp coriander, 1/4 tsp sea salt & 1/4 tsp black pepper
*to make it Whole 30 approved remove the nuts
