Sweet Potato Turkey Meatballs in Green Curry

Quick delicious meal in only 30 minutes!

ingredients

meatballs:

1 pound ground chicken

1/4 c old fashioned oats, gluten free

1/4 c coconut flour

1 small sweet potato, grated

1 tsp garlic powder

1/2 tsp ground ginger

1/4 tsp turmeric

1/2 tsp cumin

1/4 tsp salt

1/8 tsp pepper

1 tbsp olive oil ( add more for frying)

 

curry sauce:

1 tbsp olive oil

1 (15 ounce can) coconut milk

1 small red onion, sliced

1 red bell pepper, sliced

1.5 zucchini, cut into cubes

1.5 c cauliflower

1.5 c snow peas

3 tbsp green curry paste

3.5 tbsp lime juice (1.5 limes)

salt to taste

directions

  1. preheat oven to 375F
  2. in a large bowl, mix together all ingredients for the meatballs (except for olive oil)
  3. Heat a large, oven safe skillet over medium heat and add olive oil to the pan. Make balls, 1 inch in size with your hands. It works best of your hands are slightly moist with water. Place in skillet. Repeat.
  4. Brown meatballs for 4-5 minutes (they don’t need to be fully cooked.) Remove from heat. Set meatballs aside.
  5. In a separate mixing bowl, mix coconut milk, curry paste, lime juice, and salt and pepper. Set aside.
  6. Heat olive oil in the same skilled you used for the meatballs. Add red onion, red pepper and snow peas. Saute veggies for 2 mins. Add coconut curry sauce to the pan. Bring to a boil.
  7. Add browned meatballs to the skillet so they are sitting in the curry mixture. Place in the oven and bake at 375F for 15 minutes.
  8. Serve on a bed of rice or spinach.

Egg & Zoodle Salad with Mustard Orange Dressing

Another dish I love to use my spiralizer for!! I am usually starving when it comes to lunch time to I like to have meals that are fast but still tasty! Here you go all you whole 30 peeps-you are awesome!!!
Ingredients:
1 hard boiled egg
1 zucchini
1/2 avocado
1 orange pepper
1 carrot
1/2 beet
Dressing
 2 tbsp olive oil
1/2 tsp orange zest
1 tbsp orange juice
1/2 dried mustard
1/2 tsp French’s mustard
1 soaked date
1 tsp apple cider vinegar
1 minced garlic clove
Directions:
1. Hard boil 1 egg for 10 minutes.
2. Spiralize zucchini.
3. Peel egg and chop onto salad, add diced avocado, chopped up peppers and shred fresh carrots and beet on top.
4. Add all dressing ingredients to a magic bullet or mini chopper and combine till smooth.

I swear the uses of coconut oil are endless….. Here are some ways that I like to use it!

oil pulling {Add a drop of peppermint essential oil to freshen your breath at the same time!}

use as make up remover

make coconut nut butters

swap out for butter on toast

use coconut oil to make popcorn

add to your tea to soothe a sore throat

ingesting coconut oil is said to help easy your stomach

use as a base to make homemade raw chocolate

use to help with frizzy hair

use with frankincense oil for glowing skin

tin your lips {take your last bit of lipstick and mix it with some coconut oil for a lip tint}

mix it with sugar or salt with a drop of an essential oil of your choice for a body scrub

use to help body detox during a cleanse or fast

if you are prone to nose bleeds coat the

use for healthy Magic Shell ice cream {use the same recipe for raw chocolate}

puffy eyes (rub around your eyes before bed to reduce puffiness)

shaving cream {it’s quite slippery!}

smoothies {add coconut oil to increase your energy levels}

Like a baby can’t go to sleep without their binky.. I can’t go to sleep with out my diffuser!

Diffusing the oils is one of my favorite ways! It not only makes my room smell devine, but it helps me have a much deeper and restful sleep! The CDC reports that an estimated 50-70 million U.S. adults lack the proper sleep hygiene. Turning our brains off after a busy day can be tricky ( seriously I feel like my brain never stops!) but with the help of a couple of beautiful oils, you might find that a restful nights sleep is just around the corner! Before bed, add 2 drops of cedarwood and 2 drops of vetiver to your favorite diffuser! I think it might change your life 🙂

doTERRA Essential Oils

You may or may not know that I am a Wellness Advocate for doTERRA. My journey with essential oils began almost 2 years ago.  At the time I had 2 herniated disks that were causing me to have chronic pain. I was in pain constantly, but if I were to sneeze, cough or even laugh it was almost unbearable! I was starting to get a cold and was so worried because I didn’t know how I would handle it if I were sneezing and coughing all of the time. This was when my friend introduced the oils to me. She gave me a sample of On Guard and told me to put a couple drops under my tongue a couple times a day as soon as I felt like I was getting a bit sick. I started right away and I can tell you that I haven’t gotten a cold SINCE! Now- this will not be the case for everyone because everyones body is made up differently. Essential oils do not prevent, cure or treat disease, but they are a natural solution that we can use to help our bodies heal itself! I wanted to keep learning more to find other solutions to different ailments I have and I now have many success stories!

What I love about doTERRA essentials oils is the quality and the pureness.  There are many different grades and types of essential oils. What I love about doterra is that they are 100% pure, safe and are a very high grade. Doterra gets there oils from plants where they are indigenously grown- Lavender comes from France, so you know it was grown in the best climate, soil and conditions for that plant. They do lots of testing on their oils and even have the testing done by other people outside of the company so you know it is legit. You can buy therapeutic grade oils in the health food store and they may say 100% pure however, ONLY 1 drop has to be organic for them to claim that! The rest can be diluted with other oils and who knows what else. This is scary to me! Doterra has started putting bar codes on their bottles so you can even track the batch it came from to  see if it is 100% pure!

When I first started using my oils I didn’t know there were different “types” of people who use doTERRA. I came to learn that there are users, sharers and builders. I was a ‘user’ for a year before my friend approached me about sharing the oils and starting it as a business. I have NEVER been one who was wanted to sell things before and have turned down opportunities however I felt really good about doTERRA. I truly believe in the product!! For me it isn’t about the money- I get super excited when I hear success stories of people using their oils and am continually wanting to help people find natural solutions to their ailments before having to go to the doctor. My passion lies in helping others and teaching other about the oils! The bonus is that my oils are paid for and I will eventually be able to supplement my income and have so much more financial freedom!

All 3 types of people in doTERRA are important!
