Candy Cane Beet Salad

2 candy cane beets, peeled and very thinly sliced

big spoonful of mandarin oranges

1 Tbsp pistachios, chopped

2 Tbsp herbed goat cheese

1.5 tbsp olive oil

1/2 tsp agave nectar

1/2 tsp sea salt

1/4 tsp black pepper

2 tsp lime juice

2 tsp apple cider vinegar


1. In a med sized bowl mix together beets, olive oil, agave nectar, sea salt, black pepper, lime juice and apple cider vinegar. Let it merinade for a couple of hours to take the bitterness out of the beets.

2. When you are ready to serve, top with mandarin oranges,pistachios and herbed goat cheese.

Gluten Free Buttermilk Biscuits



1 cup cornstarch
1 cup brown rice flour
1 tsp. xanthan gum
4 tsp. baking powder
1/2 tsp. baking soda
1 tsp. sea salt
4 Tbsp. butter, unsalted, chilled, cut into small cubes
1 cup buttermilk
2 egg whites
cocounut cooking spray


1. Preheat oven to 400 F. Prepare two baking sheets by lining them with parchment paper and a light coating of cooking spray.

2. In a medium mixing bowl, add cornstarch, brown rice flour, xanthan gum, baking powder, baking soda, and salt. Combine with a fork until ingredients are evenly distributed throughout the mix. Add the chilled butter cubes and work the butter into the dry ingredients using your fingers or a pastry cutter until the mixture has a sandy, crumbly texture.

3. In a small measuring cup, measure the buttermilk and add the egg whites. Pour the wet ingredients into the mixture of dry ingredients and butter and work with a fork until just combined. This is a wet, slightly sticky dough, and you can easily make these into drop biscuits.

4. Bake for 15, or until the bottoms are golden brown. Serve warm with butter or jam.

*The biscuits are not super puffy. They also store well in the freezer.

It has been so long since I have had a girls night, and it was much needed!! We started at Market Collective, got some macarons from By Ollia, then to Una for pizza, walked around Mount Royal to look at the beautiful homes, got some froyo from Tuti Fruiti then went hot tubbing!

The pizza’s we got from Una:

4-maggi { provolone picante, friulano, fior di latte mozzarella, pecoriono romano, finished with truffle oil  + local urban honey}

Sausage { spicy Italian sausage, caciocavallo cheese, grana padano, fresh basil, san marzano tomato sauce}

Chef’s special { eggplant puree, fennel sausage,trecce, semi- dried tomatoes }

…I thought the Chef’s special would be my favorite but I actually liked the 4-maggi the best and I don’t normally love cheese pizza.

Bacon & Fig Gourmet Grilled Cheese

2 sliced of Udi’s Cinnamon Raisin Bread

4 sliced of smoked gouda

2 strips of bacon

1.5 tbsp. of fig jam

1 tsp ghee


  1. Spread ghee on the outside of each slice of bread.
  2. Spread fig jam on the inside of one slice, add cooked bacon & cheese.
  3. In a cast iron skillet grill your sandwich until browned on each side.
