Cauliflower ‘Bagels’

The perfect way to enjoy a bagel with out feeling so heavy! Not to mention a great way to get those veggies in! Don’t be intimidated- these cauliflower bagels are super easy to make!

Ingredients:

1/2 head cauliflower

1 eggs

1/4 tsp garlic powder

1/2 tsp onion powder

1.5 tbsp almond flour

1 tbsp coconut flour

1/4 tsp sea salt

Toppings

1/4 tsp poppy seeds

1/2 tsp sesame seeds

1/4 tsp minced garlic

1/4 tsp dried onion flakes

1/4 tsp sea salt

Directions:

1. Pre-heat the oven to 350F and line a cookie sheet with parchment paper

2. Add cauliflower to food processor and pulse till rice consistency

3. Dump cauliflower in a med sized bowl and add all ingredients (except for toppings) mix together.

4. In a separate bowl combine topping ingredients.

5. Divide cauliflower mixture into two balls and place on parchment paper. Shape into bagel form.

6. Sprinkle on toppings and bake for 15-20 minutes.

7. Once baked, remove from baking sheet- place straight on baking rack and broil for 3-5 minutes depending on how crispy you want your bagels.

8. Eat plain or serve with sandwich ingredients.

*makes 2 bagels
