BBQ Chicken Pizza

PIZZA PIZZA!!!

When I was in Ecuador volunteering in orphanages the kids would do theses little two word chants that were so adorable. They would use any 2 words, names, places, food you name it. I don’t know if they had ever had pizza before but somehow “Pizza Pizza” turned into one of our chants! So….every time I have pizza I think of those cute kids and sing our little “Pizza Pizza” song in my head.

Recipe for my Sweet Potato Crust

Whole 30 BBQ sauce 

Ingredients:

1 c tomato sauce

1/3 c unsweetened apple sauce

2 tbsp apple cider vinegar

2 tbsp coconut aminos

1.5 tbsp dijon mustard

1 tsp hot sauce

1/4 tsp pepper

1/2 tbsp coconut oil

1 clove garlic, minced

1 tsp chili powder

1/2 tsp paprika

1/4 tsp cayenne pepper

pinch of cloves

Directions:

1. In a medium bowl mix tomato sauce, apple sauce, vinegar, coconut aminos, mustard, hot sauce and pepper until combined.

2. Melt coconut butter in a med sauce pan and add garlic, chili powder, paprika, and cayenne stirring for about 30 seconds, Whisk in the sauce and bring to a boil. Let simmer for about 10 minutes. Let cool before using.

{makes about 1 cup}

Pizza Toppings:

1 red pepper

1 yellow pepper

1/2 red onion, chopped

1 large handful of spinach

12 mushrooms, sliced

3 chicken breasts, cooked

1 tbsp fresh basil finely chopped

1 tbsp nutritional yeast

BBQ sauce (use however much you like on your pizza)

Directions:

1. While the crust is cooking, cook your chicken breast and chop up all ingredients. You will also want to make the BBQ sauce.

2. Remove your crust from the oven, spread BBQ sauce, add all of the toppings- sprinkling the nutritional yeast on last.

3. Place back in the oven for about 10-15 minutes. Watch so the crust doesn’t burn.

4. Slice up your pizza and serve!
