Paleo Chocolate Zucchini Bread


I have this thing for baking treats so I can freeze them for when I need a clean treat! Sometimes it gets a little out of control and it gets kind of hard to find things in my freezer….haha! This one is definitely a keeper and is one that I will be making again and again!


1 c Justin’s Chocolate Hazelnut butter blend
2 large eggs
2 tbsp. maple syrup
1 tbsp. pure vanilla
1 tsp apple cider vinegar
1/2 tsp baking soda
1 c shredded zucchini
1/2 tbsp. Enjoy Life Chocolate chips


1. Preheat oven to 400f
2. In a medium bowl mix 1 c Justin’s chocolate hazelnut butter blend { or if you don’t have any, combine a bit less than half a cup of almond or cashew butter, 1 tbsp maple syrup, 1-2 tbsp cocoa powder} 2 large eggs, 2 tbsp maple syrup, 1 tbsp pure vanilla and mix together for 2 minutes
3. Add 1 tsp apple cider vinegar & 1/2 tsp baking soda ( it will fizz up) and mix for another 30 seconds
4. Stir in 1 c shredded zucchini ( make sure you have squeezed out as much excess water as possible!!
5. Place in lined or greased 5×9 loaf pan
6. Top with 1-2 tbsp Enjoy Life Chocolate Chips
7. Bake for 35-50 minutes. Watch loaf, if the edges seem to be done before the centre, cover the edges with tinfoil and keep baking until toothpick comes out clean
8. Allow to cool on cooling rack or serve warm. Personally I like it better cooled 🙂
