Let’s start the 12 days of Christmas off with with this sweet potato salad… because salad and sweet potatoes and two of my favourite things so why not combine them into one?!
3 med sweet potatoes
2 tbsp olive oil plus extra for coating sweet potatoes
1/2 tsp orange zest
1 tbsp orange juice
1/2 tsp dried mustard
1/2 tsp French’s Mustard
1 tbsp maple syrup
1 tsp apple cider vinegar
1 garlic clove, minced
1/3 c dried cranberries
1/3 c toasted pepitas
1. Peel and cube sweet potatoes.
2. Coat in a bit of olive oil and roast for 35 minutes ( or until tender) at 350f
3. While sweet potatoes are cooking make your dressing: In a magic bullet or mini chopper combine olive oil, orange zest, orange juice, dried mustard, french’s mustard, maple syrup, apple cider vinegar & minced garlic clove.
4. Once sweet potatoes are cooked coat with dressing ( I didn’t use all if the dressing) and mix in dried cranberries & toasted pepitas.
