I’ve been dreaming of these coconut crusted shrimp I had in Hawaii… so I came up with this!
20 small shrimp
zest of 1 lime
1/2 tsp chilli powder
2 tbsp coconut flour
1/4c unsweetened coconut
1. Mix zest of lime, chili powder, coconut flour, unsweetened coconut in a bowl ( this will make enough batter for about 20 small shrimp)
2. In a separate bowl whisk egg.
3. Dip shrimp in egg, then coat in batter and fry in coconut oil….or if you want it to be a bit healthier bake in the oven.
4. Once cooked drizzle lime juice on top & sprinkle with sea salt.
Recipe for Cauliflower rice.
