|| mini broccoli, goat cheese & pesto frittatas ||

cause everything is good when it’s mini 

-2 tbsp of homemade pesto  ( basil, spinach, garlic, black pepper, olive oil, pine nuts, sunflower seeds, bit of parmesan cheese, sea salt & oregano)
-sun dried tomatoes
-4 eggs
-broccoli (you could use asparagus or what ever veggie you would like!)
-sea salt
-goat cheese
-black pepper
-lemon juice

1. pre- heat oven to 400f
2. add homemade pesto, sun dried tomatoes & eggs into a bowl and whisk together
3. grease bake safe dish with coconut oil and place a bunch of broccoli in the bottom
4. add scallions, sea salt, goat cheese, black pepper and some lemon juice to eggs 
5. pour egg mixture over top of broccoli 
6. bake for 20-25 minutes
