4 minced garlic cloves
1/2 c diced onions
1/2 c small cubed carrots
1/2 c frozen peas
2 scrambled eggs
3 c of grated cauliflower rice (about 1/2 head in the food processor)
1 tbsp. soy sauce
2 tbsp coconut aminos
1 chicken breast
1. In a large saucepan sauté garlic cloves, and onions until the onions are soft.
2. Add carrots. once carrots are starting to soften, add frozen peas and continue cooking till they are heated through.
3. Stir in scrambled eggs, grated cauliflower, soy sauce & coconut aminos. stir frequently.
4. Add chicken (or whatever protein you would like, and you could even add more veggies- shrimp, tofu, bok choy, water chestnuts, broccoli- the options are endless!)
