|| roasted acorn squash salad with balsamic dijon dressing ||

ingredients

salad 
1 acorn squash
bag of arugula
1 pear
1 yellow pepper
1/3 c crumbled goat cheese
1/3 spicy nuts (refer to previous post)
cinnamon
cumin
red pepper flakes
sea salt
black pepper
coconut oil

dressing (to taste)
balsamic vinegar
dijon mustard
1 minced garlic clove
sea salt
garam masala 
black pepper




directions
1. preheat oven to 400f

2. cut up acorn squash toss with coconut oil, cinnamon, cumin, red pepper flakes, sea salt & black pepper 

3. spread on foil lined baking sheet and bake for about 20 minutes or until tender. remove from heat and allow to cool completely 

4. whisk together balsamic vinegar, dijon mustard, garam masala, 1 minced garlic clove, sea salt & pepper 

5. toss cooked acorn squash, arugula, crumbled goat cheese, yellow peppers, diced pear & spicy nuts ( see in a previous post) in a bowl. drizzle with dressing and enjoy 🙂
