|| beet & dill goat cheese stacks||

these are a perfect party appetizer and are a party in your mouth!!!

roasted or organic pickled beets
goat cheese
dill weed

1. pre- heat oven to 400f (if roasting beets)
2. take your raw beets, cut an x on the top and bottom, drizzle some olive oil on top cover with tin foil & bake at 400f for about 50 mins or until soft & remove from oven
3. while roasted beets are cooling start mixing dill weed into goat cheese until desired flavor is reached
4. let roasted beets  cool completely, unless you are using pickled beets then you can start filling them right away with the goat cheese
5. scrape extra cheese off the sides of beet stacks
6. top with pistachios & serve!
