|| hot cross buns ||

3 c almond flour
2 tbsp. coconut flour
2.5 tsp cinnamon
1 tsp all spice
1 tsp nutmeg
dash of ginger
1/2 tsp sea salt
2 tsp baking powder
2/3 dried fruit (add more if you would like- i used raisins, dates & prunes)
1/4 + 1 tbsp coconut oil
2.5 tbsp maple syrup
1 tsp vanilla
1/2 c almond milk

‘icing’ for the cross:
1 egg white
1 tsp agave nectar (if you would like it sweeter add more. could also use maple syrup)

1. pre- heat oven to 340f
2. mix dry ingredients together
3. stir in wet ingredients
4. stir thoroughly until mixture is well mixed
5. roll into 8 individual balls and place on baking sheet lined with parchment paper
6. bake for 35 mins (or until you can place a toothpick into rool with out seeing any wet mixture)
7. while the buns are baking use an electric mixer to whisk egg white till fluffy. add agave nectar and mix a bit longer
8. place ‘icing’ in zip lock bag and cut a tiny whole in the corner to use as a piping bag
9. remove buns from the oven, let cool for a couple of minutes then make your crosses
10. serve with jam, honey butter, regular butter or nut butter 🙂
