|| maple glazed salmon, sauteed kale & roasted veggies ||

i am moving at the end of the month so i have been trying to use up all the food i have especially the frozen food and meals i have made. i LOVE salmon! i often buy fresh salmon from costco, eat some while it fresh and cut the rest up into pieces and freeze it for meals. one of my guilty pleasures is eating the salmon raw- i bet that grosses lots of people out but hey its just like getting sashimi from a restaurant!!!

ingredients
salmon fillet
2 tsp maple syrup
1 tsp Dijon mustard
squirt of gluten free mustard
1 tsp rice wine vinegar
sea salt & pepper
kale
1/4′ minced ginger
1 minced garlic clove
olive oil
veggies (i used sweet potatoes, parsnips & green peppers)

directions
1. pre- heat oven to 350f
2. cut up sweet potatoes, parsnips & green peppers. coat with olive oil & Italian seasoning. bake for 40 minutes
3. mix maple syrup, Dijon mustard, mustard, rice wine vinegar, sea salt & pepper in a dish
4. broil salmon for about 5 minutes, remove from oven and coat with glaze. broil until browned
3. in a skillet sautéed ginger & garlic in olive oil. add kale and cook through
4. add roasted veggies to skillet and mix together

 ** i didn’t quite measure the amounts for the glaze- you may needs to add more or less
