|| spicy garlic lime chickn, baked asparagus & sweet potato ||

i don’t know why- but this took me so long to cook! don’t let that stop you from trying it though because it was delicious!! and it really shouldn’t take that long- i was just super into a heart to heart with my roomie and i’m not always great at multi tasking. its really a simple meal and i hope you enjoy:)

ingredients
sweet potato
coconut ghee
asparagus
1 minced garlic clove
olive oil
sea salt & pepper
chicken breast
lime juice
cayenne pepper
fresh parsley
thyme


directions
1. preheat the oven to 350f
2.place sweet potato on baking sheet. you will need to bake for about 40 minutes
3. after 20 minutes take sweet potato out of the oven and make slits in it. add some coconut ghee between each cut of the sweet potato. at this time you will place the asparagus in the oven
4. cut off ends of asparagus. drizzle with olive oil and sprinkle some of the minced garlic on top. don’t use all of it because you will need some for the chicken. asparagus will need to bake for about 20 mins
4. boil chicken for about 5 minutes or just long enough so it is slightly cooked. coat chicken with cayenne pepper, sea salt, pepper & thyme- i didn’t measure the amounts just estimated.
5. place chicken in frying pan with a bit of olive oil. let pan fry for about 3 minutes on each side 
6. add the rest of the mince garlic and drizzle lime juice on top
7. at the very end add some fresh parsley
