i hit up t&t market a couple of weeks ago and WOW its such a cool place! there is so much to see and such interesting food! i am one who will literally try any type of food so it was very fascinating to me! i definitely want to go back there and try a bunch of different types of eats and treats! i decided to be adventurous the day i was at t&t and i bought a type of fish called cobia- i had never heard of it before but it was a good life choice:)  it was delicious! there are several ways to cook this fish, but i was starving so i made it the quick way and broiled it in the oven! i found it to be a very mild fish- for those who don’t like that fishy taste i would recommend this one! 

ingredients
cobia
olive oil
lemons
carrots
sea salt & pepper
cayenne pepper
sweet potato 
rosemary
carrots
1 mince garlic clove
asparagus 

directions
1. pre heat oven to 400f
2. cut up sweet potato into wedges, coat with olive oil, rosemary, sea salt & pepper and let bake in the oven for about 20 mins. flip fries over after about 10 minutes so they do not burn.
3. cut up carrots and start steaming. you can add asparagus after a couple of minutes as the asparagus will cook faster. once veggies are cooked drizzle a bit of olive oil on carrots and top with minced garlic.
4. pre heat broiler. 
5. brush pan or tinfoil with olive oil to prevent cobia from sticking. fish is quite flavourful and doesn’t require too much seasoning. i added a bit of lemon juice, sea salt , pepper & a sprinkle of cayenne pepper. 
6. let cook under broiler for about 5 minutes. flip cobia over and broil for another 5 minutes. fish is ready when it is opaque all the way through
