|| mushrooms stuffed with brie cheese ||

i wanted to make a tasty side dish for sunday dinner tonight, so i took a peek in the fridge and came up with this! it was a hit at my families house:)

1 pack of mushrooms (about 20) washed and stems removed
large handful of spinach chopped 
2 garlic cloves (minced)
handful of chopped parsley
large wedge of brie cheese
himalayan pink salt & pepper
white wine vinegar

1. preheat oven to 350f
2. melt a heaping spoonful of butter in a sauce pan. add mushroom caps and toss to coat in butter. cook for about 1 minute. remove from pan and place upside down in baking dish
3. in the same sauce pan (without washing) throw in garlic, spinach & parsley. lightly salt and add a splash of white wine vinegar. stir around for a couple of minutes and remove from heat
4. remove rind from brie then cut into pieced and add to centres of mushrooms
5.  top mushrooms with spinach mixture
6. place in the over for about 10 minutes or until brie is melted
7. let cool before serving:)
