|| pumpkin enchilada soup ||

this soup is so simple and so delicious- i hope you enjoy it! 

1c pumpkin
1 can of green chillies 
1 heaping tsp of cumin
1 jalepeno
2 cloves of garlic
1 can of black beans
1/4 of a diced onion (or more depending on how much you like onions) 
2 stalks of celery
vegetable broth (to get to desired consistancy- i think i used about 2 cups)
salt & pepper to taste
shredded chicken 

dice jalapeno, onion, celery & mince garlic. place everything in a med sized pot except for the shredded chicken and cilantro. let everything cook for about 30 minutes or until desired consistency and temperature. add shredded chicken, cilantro & avocado if you wish… i would definitely recommend it:)
