|| paleo friendly onion rings ||

ingredients
2 sweet onions
2 eggs
2 cups of almond meal
1tsp garlic powder
1 tsp sea salt
1 tsp onion powder
1 tsp oregano
1 tsp basil
1 tsp italian seasoning

directions
1. spread out thickly sliced onions on parchment paper and bake for about 10 mins at 350f or until onions are a bit soft. remove onions from oven. 
2. whisk eggs in a small bowl. mix all dry ingredients into a pie dish or on a plate for dipping (it works better to have a shallower dish so the seasonings don’t get all clumpy.) you may need to adjust seasonings to taste- i kind of guessed on the amounts. 
3. dip the onions in eggs, then coat in the batter. place onions back onto parchment paper and  bake at the same temp (350f) for 20 mins or until they are golden brown!
