My naturopath has had me on the GAPS diet (slightly modified version) for the last couple of months- but sometimes I just want a big bowl of rice, quinoa or some type of grain! Sooo I was hunting for a subsitute and found this recipe! Can I just say.. it’s freaking delicious!!!! And so simple! I hope you enjoy it as much as i did:)
1 medium head of cauliflower, rinsed
1 tbsp coconut oil
2 garlic cloves
himalayan salt & pepper to taste
1/4 c of fresh cilantro
1. Wash cauliflower, remove the core and let the cauliflower dry completely. Cut into smaller chunks and place in food processor. It may not all fit in at once, and you do NOT want to over process it or it will get mushy. I pulsed couple florets of cauliflower until it was small with the texture of rice then transferred it to a bowl and repeated with remaining cauliflower.
2. Saute olive oil & mince garlic in a med saute pan. raise the heat to med- high and add the cauliflower rice. Cover and cook approx. 5- 6 minutes, stirring frequently until the cauliflower is slightly crispy on the outside but tender on the inside. Season with salt and pepper to taste.remove from heat and place in med bowl; toss with fresh cilantro and lime juice to taste.
Tastes amazing hot or cold! for lunch today I ate it cold with cherry tomatoes and avocado- best decision 🙂
